Make a rich, velvety chicken gravy in under 15 minutes using simple pantry staples. This recipe is perfect for pouring over mashed potatoes, rice, or biscuits.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk the flour into the melted butter to create a smooth roux. Cook the roux for 1 to 2 minutes, stirring constantly, until it smells slightly nutty. Do not let it brown.
  3. Slowly pour in the chicken broth while whisking continuously to prevent lumps.
  4. Bring the mixture to a simmer, continuing to whisk until the gravy thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  5. Stir in the salt, pepper, and dried thyme. Taste and adjust seasonings as needed.
  6. Remove from heat and serve immediately over your favorite comfort food.

Notes

  • For a richer flavor when using drippings, substitute 1 tablespoon of the butter with 1 tablespoon of reserved pan drippings, then reduce the flour to 2 1/2 tablespoons.
  • If the gravy is too thick, whisk in a splash more chicken broth until you reach your desired consistency.
  • For a velvety texture, strain the finished gravy through a fine-mesh sieve before serving.
