1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 cups fresh spinach
12 ounces pasta (penne or rotini work well)
Fresh basil for garnish (optional)
Instructions
Cook the pasta according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the starchy cooking water. Set the cooked pasta aside.
Season the chicken pieces with Italian seasoning, salt, and pepper.
Heat the olive oil in a large skillet or pan over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for about 1 minute until the garlic is fragrant.
Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
Stir in the heavy cream and bring the sauce back to a gentle simmer. Cook for 3 minutes until the sauce begins to thicken slightly.
Stir in the grated Parmesan cheese until the sauce is smooth.
Add the fresh spinach to the sauce and stir until it wilts down completely, about 1 to 2 minutes.
Return the cooked chicken and the drained pasta to the skillet. Toss everything together to coat evenly in the sauce. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
Serve immediately, garnished with fresh basil if you wish.
Notes
For a richer flavor, use oil-packed sun-dried tomatoes.
You can use chicken thighs instead of breasts if you prefer dark meat.
If you do not have heavy cream, you can substitute it with half-and-half, but the sauce will be thinner.
