1 pound ground chicken
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup water
3 tablespoons soy sauce (or tamari for gluten-free)
2 tablespoons rice vinegar
2 tablespoons brown sugar
1 tablespoon sriracha or chili garlic sauce (adjust to taste)
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1/4 cup chopped peanuts (optional, for topping)
1 head Bibb or butter lettuce, leaves separated and washed
Instructions
Heat the vegetable oil in a large skillet over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until browned, about 5 to 7 minutes. Drain off any excess fat.
Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
In a small bowl, whisk together the water, soy sauce, rice vinegar, brown sugar, and sriracha or chili garlic sauce to create the glaze.
Pour the glaze mixture over the chicken in the skillet. Bring to a simmer and cook for 2 to 3 minutes, stirring constantly, until the sauce thickens slightly and coats the chicken.
Remove the skillet from the heat. Stir in the fresh cilantro and green onions.
Arrange the washed lettuce cups on a serving platter. Spoon the warm chicken mixture into each lettuce cup.
Top with chopped peanuts, if using, and serve immediately.
Notes
Use Bibb or butter lettuce for the best cup shape that holds the filling well. Crisp iceberg lettuce also works if you prefer more crunch.
For a peanut sauce variation, substitute the glaze ingredients with 1/4 cup peanut butter, 2 tablespoons hot water, 1 tablespoon soy sauce, 1 tablespoon lime juice, and 1 teaspoon honey, whisking until smooth.
