Make this creamy, flavorful sweet potato coconut curry soup. It is a simple, satisfying dish perfect for a healthy dinner.

  • 2 tablespoons coconut oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large sweet potatoes (about 2 pounds), peeled and cubed
  • 4 cups vegetable broth
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1 tablespoon maple syrup (optional, for extra sweetness)
  • 1 cup fresh spinach, packed
  • Juice of 1/2 lime

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic, grated ginger, turmeric, curry powder, salt, and pepper. Cook for 1 minute until fragrant.
  4. Add the cubed sweet potatoes and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and simmer, covered, for 15 to 20 minutes, or until the sweet potatoes are very tender.
  5. Remove the pot from the heat. Use an immersion blender to blend the soup until smooth, or carefully transfer batches to a regular blender and return the pureed soup to the pot.
  6. Stir in the full-fat coconut milk and maple syrup, if using. Heat gently over low heat, but do not boil.
  7. Stir in the fresh spinach until it wilts completely.
  8. Stir in the lime juice just before serving. Taste and adjust salt or spice as needed.

Notes

  • For a thicker soup, use less vegetable broth initially.
  • If you want a spicier kick, add 1/4 teaspoon of red pepper flakes with the dry spices.
  • This soup freezes well for later meals. Cool completely before storing.
  • Serve this healthy comfort food soup with crusty bread or a sprinkle of chopped cilantro.
