Make creamy, cafe-style Korean strawberry milk at home using a simple syrup made from fresh strawberries. This recipe delivers a naturally sweet, vibrant pink drink that is much better than store-bought versions.

  • 1 cup fresh strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 cups cold milk (dairy or non-dairy for a vegan option)
  • Ice cubes (optional)

Instructions

  1. Make the Strawberry Syrup: Combine the fresh strawberries, sugar, and water in a small saucepan.
  2. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the strawberries begin to break down, about 5 to 7 minutes.
  3. Reduce the heat to low and simmer for another 5 minutes, gently mashing the strawberries with a spoon to release their juices and create a thick syrup.
  4. Remove the syrup from the heat and let it cool completely. You can strain out the solids for a smooth syrup, or leave some chunks for texture, like in cafe-style drinks.
  5. Assemble the Drink: In a tall glass, spoon 2 to 3 tablespoons of the cooled strawberry syrup into the bottom.
  6. Add ice cubes if desired.
  7. Slowly pour 1 cup of cold milk over the syrup and ice. Do not stir immediately to achieve the layered, pink look.
  8. Serve immediately, encouraging the drinker to stir before sipping for the best flavor combination.
