Ingredients

Scale
  • 6 cups baby spinach
  • 1 pint fresh strawberries, sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pecans or walnuts
  • 1/4 cup homemade balsamic vinaigrette

Instructions

  1. Wash and thoroughly dry the baby spinach leaves. Place them in a large bowl.
  2. Add the sliced strawberries, crumbled feta cheese, and toasted pecans or walnuts to the bowl with the spinach.
  3. Drizzle the homemade balsamic vinaigrette over the salad ingredients.
  4. Gently toss the salad until all ingredients are lightly coated with the dressing.
  5. Serve immediately as a side dish or light lunch.

Notes

  • For a crunchier texture, toast your nuts lightly in a dry skillet over medium heat for 3 to 5 minutes, stirring often.
  • You can prepare the dressing ahead of time and store it in the refrigerator for up to one week.
  • If you prefer a sweeter salad, add 1/4 cup of dried cranberries along with the other toppings.
  • This recipe is easily adaptable for a main course by adding grilled chicken or turkey bacon.
