  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the tomato sauce, diced tomatoes (with juice), basil, oregano, salt, and pepper. Stir to combine.
  4. Pour in the beef broth and bring the mixture to a simmer.
  5. Add the broken lasagna noodles to the skillet. Stir them into the sauce mixture, making sure they are mostly submerged.
  6. Cover the skillet and reduce the heat to medium-low. Cook for 12 to 15 minutes, stirring occasionally to prevent the noodles from sticking, until the noodles are tender.
  7. While the noodles cook, mix the ricotta cheese, egg, and Parmesan cheese together in a small bowl.
  8. Once the noodles are cooked, remove the skillet from the heat. Drop spoonfuls of the ricotta mixture evenly over the top of the lasagna mixture.
  9. Sprinkle the mozzarella cheese over the ricotta dollops.
  10. Cover the skillet again and let it stand for 5 minutes to allow the cheese to melt and the dish to set slightly. Serve directly from the skillet.

Notes

  • For a richer flavor, substitute Italian sausage for the ground beef.
  • If you do not have lasagna noodles, you can use broken spaghetti or penne pasta, adjusting the cooking time slightly if needed.
