Make this rich, creamy, and savory sausage cream cheese dip for your next gathering. This simple recipe is perfect for game day or parties and uses just four main ingredients.

Ingredients

Scale
  • 1 pound breakfast sausage (or hot sausage)
  • 1 (8 ounce) package cream cheese, softened
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 cup shredded sharp cheddar cheese
  • Tortilla chips, crackers, or raw vegetables for serving

Instructions

  1. If using a stovetop, brown the sausage in a large skillet over medium heat. Drain off any excess grease.
  2. Reduce the heat to low. Add the softened cream cheese and the can of diced tomatoes and green chilies (with their liquid) to the skillet with the sausage. Stir until the cream cheese is fully melted and the mixture is smooth and combined.
  3. Stir in the shredded cheddar cheese until it melts completely into the dip. Heat through until warm.
  4. If using a slow cooker, combine the browned and drained sausage, cream cheese, and undrained tomatoes and green chilies in the slow cooker. Cook on low for 1 to 2 hours, stirring occasionally until smooth. Stir in the cheddar cheese during the last 15 minutes of cooking until melted.
  5. Transfer the hot cheese dip to a serving bowl. Serve immediately with your favorite dipping items.

Notes

  • For a chunkier dip, use a mild or medium sausage. For more heat, use hot Italian sausage.
  • You can substitute Velveeta cheese for the cheddar cheese for an even smoother texture, often seen in classic Rotel sausage dip recipes.
  • If the dip thickens too much while serving, add a splash of milk or heavy cream to restore the creamy consistency.
