1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup Bailey’s Irish Cream (or similar cream liqueur)
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Bang Bang Sauce:
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons sriracha (adjust to your spice preference)
1 tablespoon lime juice
1 teaspoon brown sugar

Instructions
In a bowl, combine the Bailey’s Irish Cream, soy sauce, olive oil, garlic powder, salt, and pepper. This is your unique chicken marinade.
Add the cubed chicken to the marinade, toss to coat completely, cover, and refrigerate for at least 30 minutes or up to 4 hours.
While the chicken marinates, prepare the Bang Bang Sauce. In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and brown sugar until smooth. Set aside.
If using wooden skewers, soak them in water for 20 minutes to prevent burning.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F (200°F) if baking.
Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred. If baking, place skewers on a foil-lined baking sheet and bake for 18-20 minutes, flipping halfway.
Brush the cooked skewers lightly with some of the prepared Bang Bang Sauce during the last few minutes of cooking for a glaze.
Serve the grilled chicken skewers immediately with the remaining creamy dipping sauce for kebabs on the side.
Notes
For a more intense flavor, you can reduce the marinade liquid slightly on the stovetop until thick and use it as a final glaze.
If you prefer a less sweet sauce, reduce the sweet chili sauce amount and increase the sriracha slightly.
