  • 3 large sweet potatoes, scrubbed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the sweet potato cubes in a large bowl. Drizzle with olive oil.
  3. Add the salt, pepper, garlic powder, and smoked paprika to the bowl. Toss everything together until the sweet potatoes are evenly coated with oil and seasoning.
  4. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to allow for proper crisping.
  5. Roast for 25 to 30 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when they are fork-tender and have developed caramelized, crispy edges.
  6. Remove from the oven and serve immediately as a healthy roasted vegetable side dish.

Notes
