4 tbsp unsalted butter, melted
3 tbsp honey
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Place the baby carrots in a large bowl.
In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined. This creates your sweet and savory glaze.
Pour the honey garlic butter mixture over the carrots. Toss well until all the carrots are evenly coated.
Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure proper caramelization.
Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized around the edges.
