  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of salt and black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the beer until the mixture is smooth and begins to thicken slightly.
  4. Reduce the heat to low. Add the shredded sharp cheddar cheese and Monterey Jack cheese one handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not let the mixture boil.
  5. Stir in the Dijon mustard and garlic powder. Season with salt and pepper to taste.
