Make fudgy, chewy brownies that taste like the classic treat but pack a protein punch. This recipe uses simple ingredients to create a decadent, high protein snack.

  • 1/2 cup unsweetened cocoa powder
  • 1 scoop (about 30g) chocolate protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt (2% or full fat)
  • 1/2 cup chocolate chips (for batter)
  • 1/2 cup rainbow candy-coated chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, cocoa powder, protein powder, baking powder, and salt. Set this dry mixture aside.
  3. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until smooth.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and Greek yogurt until just combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients. Mix on low speed or by hand until just combined. Do not overmix. Fold in the 1/2 cup of chocolate chips.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack. Cooling helps them set and achieve a chewy texture.
  9. Once cool, prepare the simple chocolate glaze (optional, for extra fudginess) or simply melt a few extra chocolate chips and spread a thin layer over the top.
  10. Immediately sprinkle the top generously with the rainbow candy-coated chocolate chips before the glaze sets.
  11. Once the topping is set, lift the brownies out of the pan using the parchment paper overhang and cut into 16 squares.

Notes

  • For the fudgiest texture, do not overbake. The center should look slightly underdone when you remove them from the oven.
  • You can substitute the Greek yogurt with 1/2 cup of unsweetened applesauce for a lower fat option, though the texture will be slightly less dense.
  • Use a high-quality cocoa powder to deepen the chocolate flavor in these decadent protein snacks.
