High-Protein Banana Bread with Greek Yogurt

Make a moist, familiar-tasting banana bread with added protein using Greek yogurt and your favorite protein powder. This is a simple quick bread perfect for a post-workout snack or healthy breakfast.

  • 3 large very ripe bananas, mashed
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup melted coconut oil or butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 1 cup whole wheat flour
  • 1/2 cup vanilla or unflavored whey protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, Greek yogurt, melted coconut oil, eggs, and vanilla extract. Mix until just combined.
  3. Stir in the brown sugar.
  4. In a separate medium bowl, whisk together the whole wheat flour, protein powder, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients. Mix with a spatula until you have a uniform batter. Do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For best results and maximum moisture, use bananas that are heavily spotted or almost black.
  • If your protein powder is unflavored, you may want to add 1/4 cup of chocolate chips or chopped walnuts for extra flavor.
  • This bread freezes well; wrap individual slices tightly in plastic wrap before placing them in a freezer bag.
