3/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
2 1/4 cups all-purpose flour

1 1/2 cups semi-sweet chocolate chips
1/2 cup crushed candy canes (for mixing in)
1/4 cup crushed candy canes (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This takes about 3 minutes with an electric mixer.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peppermint extract.
In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
Fold in the semi-sweet chocolate chips and the 1/2 cup of crushed candy canes using a spatula.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Gently press a few extra crushed candy canes onto the top of each dough ball.
Bake for 9 to 11 minutes, or until the edges are set and lightly golden. The centers should still look slightly soft for a chewy texture.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the chewiest cookies, chill the dough for at least 30 minutes before baking.
If you do not have peppermint extract, you can use 1/4 teaspoon of pure mint extract, but adjust to taste as it can be stronger.
