1 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups powdered sugar
Instructions
Line an 8×8 inch pan with parchment paper, leaving an overhang on two sides for easy removal.
In a microwave-safe bowl, combine the peanut butter and vanilla extract. Microwave on high for 30 seconds. Stir until smooth.
Add the powdered sugar to the peanut butter mixture. Stir well until completely combined and a thick dough forms. You may need to use your hands toward the end.
Press the fudge mixture evenly into the prepared pan. Use the parchment overhang to lift the fudge out once it is firm.
Refrigerate for at least 2 hours, or until completely set.
Cut into small squares before serving.
Notes
For a richer flavor, use natural peanut butter, but stir it well before measuring.
If the mixture is too stiff to stir, microwave it for another 10 seconds.
For gift giving, cut the fudge into small pieces and place them in small cellophane bags tied with ribbon.
