1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
4 slices bacon, chopped
1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 (16 ounce) package shelf-stable potato gnocchi
4 cups chicken broth
1 (1 ounce) packet dry ranch seasoning mix
8 ounces cream cheese, cut into cubes
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Cook the chopped bacon in a large, deep skillet over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the skillet.
Add the olive oil to the skillet. Add the diced chicken and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside with the bacon.
Add the diced onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Add the gnocchi, chicken broth, and dry ranch seasoning mix to the skillet. Bring the mixture to a simmer, stirring occasionally. Cook for about 5 to 7 minutes, or until the gnocchi starts to float and soften.
Reduce the heat to low. Stir in the cream cheese cubes until they melt and the sauce becomes smooth. Stir in the heavy cream.
Return the cooked chicken to the skillet. Stir everything together until the chicken is heated through.
Sprinkle the mozzarella cheese over the top and let it melt for 2 minutes.
Remove the skillet from the heat. Top with the reserved cooked bacon and fresh parsley before serving.
Notes
If you prefer a thicker sauce, let the mixture simmer uncovered for a few extra minutes before adding the cream cheese.
You can substitute turkey bacon for standard bacon if desired.
This recipe works well with pre-cooked rotisserie chicken if you want to skip browning the raw chicken.
