A simple, flavorful olive oil dip recipe featuring fresh garlic and herbs, perfect for serving with rustic or Italian bread as an appetizer.

Ingredients

  • 1 cup extra virgin olive oil (use good quality for dipping)
  • 3 cloves fresh garlic, minced finely
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon coarse sea salt
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place the minced garlic, dried oregano, dried basil, and red pepper flakes (if using) into a shallow serving dish or bowl.
  2. Pour the extra virgin olive oil over the herbs and garlic mixture.
  3. Stir the ingredients gently to combine them.
  4. Sprinkle the coarse sea salt over the top of the oil.
  5. Let the dip sit at room temperature for at least 15 minutes before serving. This allows the flavors to infuse the oil.
  6. Just before serving, sprinkle the fresh chopped parsley over the dip.
  7. Serve immediately with warm, crusty bread for dipping.

Notes

  • For the best flavor, choose an extra virgin olive oil that you enjoy the taste of on its own, as this is the main component of the dip.
  • If you prefer a stronger garlic flavor, you can gently warm the oil with the garlic for two minutes before cooling and adding the herbs. Do not brown the garlic.
  • This dip pairs well with sourdough, focaccia, or any rustic Italian bread.
