Ingredients
Scale
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
1 cup packed light brown sugar
2 large eggs
1 1/2 cups unsweetened applesauce
1/4 cup milk (whole or 2%)
1 teaspoon vanilla extract
Optional: Powdered sugar for dusting or Cream Cheese Frosting ingredients
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan or two 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set this dry mixture aside.
In a large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy. You can use an electric mixer for this step.
Beat in the eggs one at a time, mixing well after each addition.
In a separate bowl or measuring cup, stir together the applesauce, milk, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce mixture. Begin and end with the dry ingredients, mixing only until just combined. Do not overmix the batter.
Pour the batter evenly into your prepared pan(s).
Bake for 30 to 35 minutes for a 9×13 pan, or 30 to 35 minutes for round layers, or until a wooden pick inserted into the center comes out clean.
Let the cake cool completely in the pan on a wire rack before dusting with powdered sugar or spreading with your favorite cream cheese frosting.
Notes
For an extra cozy flavor, you can add 1/2 cup of raisins or chopped walnuts to the batter with the dry ingredients.
If you prefer a richer cake, substitute the unsweetened applesauce with a mix of half unsweetened applesauce and half cinnamon applesauce.
This cake keeps well covered at room temperature for up to three days, maintaining its moist texture.
