  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 4 large eggs
  • 1/2 cup milk (whole or 2%)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon butter, melted (for greasing)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 12-cup mini muffin tin with melted butter.
  2. Distribute the chopped spinach evenly among the prepared muffin cups.
  3. Sprinkle the crumbled feta cheese over the spinach in each cup.
  4. In a medium bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  5. Carefully pour the egg mixture over the spinach and feta in each muffin cup, filling them about three-quarters full.
  6. Bake for 15 to 18 minutes, or until the centers are set and a knife inserted near the center comes out clean.
  7. Let the mini quiches cool in the pan for 5 minutes before carefully removing them. Serve warm or at room temperature.

Notes

  • You can prepare the batter and fill the muffin tins the night before. Cover and refrigerate, then add 2-3 minutes to the baking time if baking directly from the refrigerator.
