Make comforting, single-serving apple crisps baked perfectly in ramekins. This easy recipe delivers the classic cinnamon-spiced apple filling and crunchy topping in personal portions.

Ingredients

Scale
  • 2 medium Granny Smith apples, peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour
  • 1 tablespoon cold unsalted butter, cut into small pieces
  • 1/4 cup old-fashioned rolled oats
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease two small ramekins (about 6-ounce size).
  2. In a small bowl, combine the diced apples, lemon juice, granulated sugar, cinnamon, nutmeg, and 1 tablespoon of flour. Mix well to coat the apples.
  3. Divide the apple mixture evenly between the two prepared ramekins.
  4. In a separate small bowl, prepare the topping by mixing the rolled oats, brown sugar, 1 tablespoon of flour, and 1 tablespoon of cold butter. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Sprinkle the topping evenly over the apple mixture in each ramekin.
  6. Place the ramekins on a small baking sheet. Bake for 25 to 30 minutes, or until the topping is golden brown and the apple filling is bubbly.
  7. Let the mini apple crisps cool slightly before serving.

Notes

  • For a richer flavor, add 1/2 teaspoon of vanilla extract to the apple filling mixture.
  • If you prefer a softer topping, substitute the oats with 1/4 cup of all-purpose flour in the topping mixture for a quick apple crumble texture.
  • These individual apple crisp recipe portions are excellent served warm with a scoop of vanilla ice cream.
