  • 1 (9 inch) graham cracker crust, pre-made
  • 1 (8 ounce) package cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 cup crushed pineapple, well drained
  • 1 cup chopped pecans, toasted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually beat in the sweetened condensed milk and vanilla extract until the mixture is fully combined and creamy.
  3. Gently fold in the well-drained crushed pineapple and the toasted chopped pecans.
  4. Carefully fold in the thawed whipped topping until just combined. Do not overmix.
  5. Spoon the filling evenly into the pre-made graham cracker crust.
  6. Chill the pie in the refrigerator for at least 4 hours, or until firm.
  7. Before serving, you can optionally top the pie with extra whipped topping and a sprinkle of pecans.

Notes

  • Make sure the crushed pineapple is very well drained; excess liquid will thin the filling. Press the pineapple between paper towels to remove moisture.
  • Toasting the pecans enhances their flavor significantly. Spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, watching closely.
  • This is a great make-ahead dessert. You can prepare it the day before serving.
