Make the classic fast-food favorite at home. This recipe delivers crispy tortillas layered with seasoned ground beef, refried beans, and melted cheese for a satisfying, quick Tex-Mex dinner.

  • 6 small flour tortillas
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 1 cup Mexican cheese blend, shredded
  • 1 cup Mexican pizza sauce (or enchilada sauce)
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup diced tomatoes (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly brush both sides of the flour tortillas with vegetable oil.
  2. Bake the tortillas directly on the oven rack for 5 to 7 minutes, flipping halfway through, until they are golden brown and crispy. Set aside.
  3. In a skillet over medium heat, cook the ground beef until browned. Drain off any excess fat.
  4. Stir in the taco seasoning mix and water. Simmer for 5 minutes, stirring occasionally, until the liquid reduces.
  5. To assemble the first layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  6. Top the beans with half of the seasoned ground beef. Sprinkle with half of the shredded cheese.
  7. Place the second crispy tortilla on top of the first layer. Spread the remaining refried beans over this tortilla, followed by the remaining ground beef.
  8. Top with the second crispy tortilla. Spread the Mexican pizza sauce evenly over the top tortilla.
  9. Sprinkle the remaining shredded cheese over the sauce. Add sliced black olives and diced tomatoes, if using.
  10. Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  11. Slice into wedges and serve immediately for a perfect weeknight meal.

Notes

  • For extra flavor, use a homemade taco seasoning blend instead of a packet.
  • If you want a thicker, richer sauce, combine tomato sauce with a small amount of chili powder and cumin to mimic the original flavor.
  • You can prepare the seasoned beef ahead of time to speed up assembly for a quick lunch solution.
