1 package (16 ounces) phyllo dough, thawed
1 tablespoon olive oil
1 small onion, finely chopped
10 ounces fresh spinach, chopped
8 ounces feta cheese, crumbled
1 large egg, lightly beaten
1/4 teaspoon ground nutmeg
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1/2 cup unsalted butter, melted
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the chopped spinach to the skillet. Cook until the spinach wilts and all excess moisture evaporates. Remove from heat and let cool slightly.
In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, nutmeg, black pepper, and Parmesan cheese. Mix well.
Unroll the thawed phyllo dough. Keep the sheets covered with a damp towel while you work to prevent drying.
Lay one sheet of phyllo dough flat. Brush the entire surface lightly with melted butter. Place another sheet directly on top and brush with butter. Repeat this process until you have a stack of 4 buttered sheets.
Cut the stacked phyllo sheets into 3 equal strips lengthwise.
Place about 1 tablespoon of the spinach and feta filling near one end of a strip. Fold the corner over the filling to form a triangle shape, similar to folding a flag. Continue folding the dough over itself to create a triangle shape until you reach the end of the strip. Brush the final edge with butter to seal.
Place the finished crisp seam-side down on the prepared baking sheet. Repeat with the remaining phyllo sheets and filling.
Brush the tops of all the crisps lightly with any remaining melted butter.
Bake for 15 to 18 minutes, or until the crisps are golden brown and crisp. Serve warm.
Notes
For an air fryer method, cook at 350 degrees Fahrenheit for 8 to 10 minutes, checking halfway through for even browning.
You can substitute puff pastry for phyllo dough; cut into small squares and place a spoonful of filling in the center, then fold into triangles and brush with egg wash instead of butter.
If you want a lower-fat option, brush the phyllo sheets with a light coating of olive oil instead of butter.
