Make this hearty, family-favorite meatloaf casserole combining savory meatloaf, creamy potatoes, and melted cheese. It is a simple ground beef dinner perfect for busy weeknights.

  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon dried parsley
  • 2 cups cooked, mashed potatoes (prepared with butter and milk)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup ketchup or preferred meatloaf glaze

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, Worcestershire sauce, and parsley. Mix gently with your hands until just combined; do not overmix.
  3. Press half of the meat mixture evenly into the bottom of the prepared baking dish.
  4. Spread the prepared mashed potatoes evenly over the meat layer. Sprinkle half of the shredded cheddar cheese over the potatoes.
  5. Top the cheese layer with the remaining meat mixture, pressing it down gently to form an even layer.
  6. Spread the ketchup or glaze evenly over the top layer of meat.
  7. Bake for 40 minutes.
  8. Remove the casserole from the oven and sprinkle the remaining cheddar cheese over the top.
  9. Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meat reaches 160 degrees Fahrenheit.
  10. Let the casserole rest for 10 minutes before you cut and serve it.

Notes

  • For an extra layer of flavor, mix 1/4 cup of cooked, crumbled bacon into the mashed potatoes before layering.
  • You can prepare the meat mixture and layer the potatoes and cheese the day before. Cover tightly and refrigerate. Add 10 minutes to the initial bake time if baking straight from the refrigerator.
  • This recipe works well for meal prep; cut leftovers into portions and freeze them after they cool completely.
