  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 5 to 7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let it burn.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
