  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 12 ounces penne pasta (or your preferred shape)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil, chopped

Instructions

  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the chopped sun-dried tomatoes to the skillet and cook for 1 minute until fragrant. Add the minced garlic and cook for 30 seconds more.
  4. Pour in the chicken broth and bring the liquid to a simmer. Add the dry pasta to the skillet, stirring to submerge it in the liquid.
  5. Cover the skillet and cook for 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender and most of the liquid is absorbed.
  6. Stir in the heavy cream and return the cooked chicken to the skillet. Let the sauce simmer gently for 2 to 3 minutes until the sauce thickens slightly.
  7. Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Taste and adjust seasoning if needed. Stir in the fresh basil. Serve immediately with extra Parmesan cheese on top.

  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
