Prepare tender, flavorful tuna steaks using this quick soy and citrus marinade. This recipe works well for grilling or searing in a cast iron pan.

Ingredients

Scale
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper

Instructions

  1. In a medium bowl, whisk together the soy sauce, lime juice, olive oil, brown sugar, minced garlic, grated ginger, and black pepper until the sugar dissolves.
  2. Place your tuna steaks in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the tuna steaks, ensuring they are fully coated.
  4. Marinate the tuna for 15 to 30 minutes at room temperature. Do not marinate longer than 30 minutes, as the acid can begin to cure the fish.
  5. Remove the tuna from the marinade and pat the surface dry with paper towels before cooking. Discard the remaining marinade.

Notes

  • For grilling, aim for 2 to 3 minutes per side over high heat for medium-rare.
  • For a cast iron sear, heat the pan until very hot before adding a thin layer of high-heat oil.
  • This marinade is a good choice for ahi tuna steak.
