Make this sweet, creamy Mandarin Orange Fluff Salad, a retro side dish that tastes like an orange creamsicle. You only need five simple ingredients for this quick potluck salad.

Ingredients

Scale
  • 1 (3 ounce) package orange gelatin (Jello)
  • 1 cup boiling water
  • 1 (11 ounce) can mandarin oranges, drained
  • 1 cup cold water
  • 1 cup whipped topping (frozen, thawed)

Instructions

  1. Prepare the orange gelatin: Pour the boiling water into a medium bowl and whisk in the gelatin powder until completely dissolved.
  2. Add the cold water to the gelatin mixture and stir well.
  3. Place the bowl in the refrigerator and chill until the mixture thickens to the consistency of soft egg whites, about 45 to 60 minutes. Do not let it set completely.
  4. Once thickened, gently fold in the drained mandarin oranges and the thawed whipped topping until just combined.
  5. Pour the salad mixture into a serving dish.
  6. Chill the salad for at least 2 hours, or until firm, before serving.

Notes

  • For a slightly different texture, you can substitute the whipped topping with 8 ounces of softened cream cheese mixed with 1/2 cup powdered sugar.
  • Drain the canned mandarin oranges very well to prevent the salad from becoming watery.
  • This salad is best served cold as a holiday salad side dish or summer citrus salad.
