  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until the mixture is light and fluffy.
  3. Beat in the vanilla extract, salt, lemon juice, and lemon zest until just combined.
  4. Gradually add the flour to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
  5. Roll the dough into small balls, about 1 inch in diameter. Place them 2 inches apart on the prepared baking sheets.
  6. Bake for 12 to 15 minutes, or until the edges are set but the cookies remain pale.
  7. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
  8. While still warm, gently roll each cookie in extra powdered sugar until fully coated.
  9. Let the cookies cool completely on a wire rack. Roll them in powdered sugar a second time once they are cool for a thicker coating.

  • For the best melt-in-your-mouth texture, make sure your butter is truly softened, not melted.
  • Use fresh lemon zest and juice for the brightest flavor.
