  • 4 (6 oz) salmon fillets, skin on or off
  • 2 tablespoons avocado oil or olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat the avocado oil in a large skillet over medium-high heat until shimmering.
  3. Place the salmon fillets skin-side down (if using skin-on) in the hot skillet. Sear for 4 to 5 minutes until the skin is crisp.
  4. Flip the salmon fillets and cook for another 3 to 5 minutes, depending on thickness, until cooked through to your preference. Remove the salmon from the skillet and set aside on a plate.
  5. Reduce the heat to medium-low. Add the butter to the same skillet. Let it melt completely.
  6. Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  7. Stir in the fresh lemon juice, lemon zest, oregano, and red pepper flakes, if using. Cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  8. Return the salmon fillets to the skillet. Spoon the lemon garlic butter sauce over the fish several times.
  9. Sprinkle with fresh chopped parsley before serving immediately. This is a great healthy fat dinner recipe.
