Make these easy, low-carb egg bites in a muffin tin for a perfect keto breakfast or portable snack. They are high in healthy fat and protein.

  • 12 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked, crumbled bacon
  • 1/4 cup chopped fresh spinach
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin.
  2. In a large bowl, whisk together the eggs and heavy cream until well combined and slightly frothy.
  3. Stir in the shredded cheddar cheese, crumbled bacon, and chopped spinach. Season the mixture with salt and pepper.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 20 minutes, or until the egg bites are set and lightly golden brown. A knife inserted near the center should come out clean.
  6. Let the egg bites cool in the tin for 5 minutes before carefully removing them.
  7. Serve warm or cool completely for make ahead breakfast storage.

Notes

  • For freezer friendly keto snacks, cool the egg bites completely, then place them in an airtight freezer bag. They reheat well in the microwave.
  • If you prefer a different flavor, substitute the bacon and spinach with 1/2 cup cooked sausage and 1/4 cup diced bell peppers.
