1/4 cup erythritol or monk fruit blend sweetener
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/4 cup powdered erythritol or monk fruit blend sweetener (for coating)
2 tablespoons ground cinnamon (for coating)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan or line it with silicone liners.
In a medium bowl, whisk together the almond flour, 1/4 cup granulated sweetener, baking powder, 1/2 teaspoon cinnamon, and salt.
In a separate small bowl, whisk the eggs, melted butter, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix the batter.
Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 10 to 12 minutes, or until the edges are lightly golden.
While the donut holes bake, prepare the coating. In a shallow dish, mix the 1/4 cup powdered sweetener and 2 tablespoons of ground cinnamon thoroughly.
Remove the donut holes from the oven and let them cool in the pan for 5 minutes before carefully transferring them to a wire rack.
While the donut holes are still warm, roll each one gently in the cinnamon-sweetener mixture until fully coated.
Serve warm or at room temperature.
Notes
For an air fryer keto donut holes variation, bake at 320°F (160°C) for 6 to 8 minutes, checking often.
If you prefer a richer flavor, substitute 2 tablespoons of the almond flour with 2 tablespoons of coconut flour.
This recipe makes a great fat bomb donut hole variation; you can add 1 tablespoon of softened cream cheese to the wet ingredients for extra richness.
