Make comforting cheeseburger flavors in a crispy, low-carb package using your air fryer. These keto egg rolls use cheese wraps instead of traditional wrappers for a quick, macro-friendly snack or meal.

  • 1 lb ground beef (80/20 recommended)
  • 4 slices cheddar cheese, shredded
  • 2 tablespoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce (check for zero sugar/keto compliance)
  • 1/4 cup dill pickle relish (ensure no added sugar)
  • 12 slices provolone cheese or low-carb cheese wraps (e.g., brand like ‘Folios’ or similar)
  • 1 tablespoon butter, melted (for brushing)
  • Optional: 4 slices cooked bacon, crumbled
  • Optional: Keto-friendly mustard or sugar-free ketchup for dipping

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain off excess grease completely.
  2. Return the beef to the skillet. Stir in the onion powder, garlic powder, salt, pepper, and Worcestershire sauce. Cook for 2 minutes until fragrant.
  3. Remove the beef mixture from the heat. Stir in the shredded cheddar cheese and pickle relish until the cheese is melted and combined. If using bacon, stir it in now. Let the mixture cool slightly, about 10 minutes.
  4. Prepare your wrappers. If using low-carb cheese wraps, lay one flat. If using provolone slices, lay two slices slightly overlapping to form a rectangle large enough to hold filling.
  5. Place about 2 tablespoons of the cooled beef mixture near one edge of the cheese wrap or overlapping slices.
  6. Fold the sides inward over the filling, then tightly roll the wrap away from you, similar to rolling a traditional egg roll. The cheese should seal itself as it cooks. Repeat with remaining filling and wrappers.
  7. Preheat your air fryer to 375°F (190°C).
  8. Lightly brush the outside of each assembled egg roll with melted butter.
  9. Place the egg rolls in the air fryer basket in a single layer, ensuring they do not touch. You may need to work in batches.
  10. Air fry for 8 to 10 minutes, flipping them halfway through, until the exterior is golden brown and crispy.
  11. Serve immediately with your preferred keto dipping sauce.

  • If you cannot find specialized low-carb cheese wraps, use two slices of provolone cheese overlapped to create a larger surface area for rolling.
