  • 1 pound sweet Italian sausage, casings removed
  • 2 large onions, sliced
  • 3 bell peppers (one red, one green, one yellow), sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup low-sodium chicken broth
  • 4 crusty rolls for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned, about 5 to 7 minutes. Drain off any excess grease.
  2. Add the sliced onions and bell peppers to the skillet with the sausage. Cook, stirring occasionally, until the vegetables begin to soften, about 8 minutes.
  3. Stir in the minced garlic, oregano, salt, and pepper. Cook for 1 minute until the garlic is fragrant.
  4. Pour in the chicken broth. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover the skillet and let it cook for 10 minutes, allowing the flavors to blend and the vegetables to finish softening.
  5. Remove the lid and cook for another 2 to 3 minutes if you prefer less liquid.
  6. Serve hot. You can serve this over pasta, rice, or place the mixture into crusty rolls for a classic sausage and peppers hoagie.
