  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 cup water
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1/2 cup heavy cream (optional, for creamy soup)
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set your Instant Pot to the Sauté function. Add olive oil. When hot, add ground beef or sausage and cook until browned, breaking it up with a spoon. Drain excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes.
  3. Stir in the minced garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, beef broth, and water. Scrape the bottom of the pot to remove any browned bits.
  5. Add the broken lasagna noodles. Do not stir them in completely; just submerge them as much as possible.
  6. Secure the lid and set the valve to Sealing. Select Manual or Pressure Cook on High for 4 minutes.
  7. When the cooking time is complete, allow the pressure to naturally release for 5 minutes, then carefully perform a quick release of any remaining pressure.
  8. Open the lid. Stir in the heavy cream, if using.
  9. Stir in 1/2 cup of the mozzarella cheese and 1/4 cup of the Parmesan cheese until melted and creamy.
  10. Ladle the soup into bowls. Top each serving with the remaining mozzarella, Parmesan cheese, and a sprinkle of fresh parsley.

Notes

  • For a heartier meal, use ground Italian sausage instead of ground beef.
  • If you skip the heavy cream, the soup will have a more traditional tomato broth base.
  • You can substitute the lasagna noodles with 6 ounces of small pasta shapes like rotini or penne; adjust the pressure cooking time to 3 minutes if using smaller pasta.
  • Serve this easy weeknight dinner with crusty bread for dipping.
