Make the fudgy, chewy, nostalgic Cosmic Brownies from scratch with this reliable recipe, complete with the signature chocolate glaze and candy chip topping.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons milk or cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup unsweetened cocoa powder (for frosting)
  • 1/2 cup candy-coated chocolate pieces (like M&Ms or cosmic chips)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix to keep the brownies fudgy.
  6. Fold in the 1/2 cup of melted semi-sweet chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for a chewy texture.
  9. Let the brownies cool completely in the pan on a wire rack.
  10. Prepare the frosting: In a medium bowl, whisk together the powdered sugar, 1/4 cup cocoa powder, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth. Add more milk, one teaspoon at a time, if the frosting is too thick. You want a thick, spreadable glaze.
  11. Spread the chocolate frosting evenly over the cooled brownies.
  12. Immediately sprinkle the candy-coated chocolate pieces over the wet frosting.
  13. Let the frosting set for about 30 minutes before cutting into squares. Lift the brownies out of the pan using the parchment paper overhang before slicing.

Notes

  • For the fudgiest texture, avoid overbaking. The center should remain slightly underdone when you pull them out.
  • If you cannot find specific cosmic chips, use small, colorful candy-coated chocolates for the topping.
  • To get that dense, chewy brownie texture, make sure you use melted chocolate chips folded into the batter, which adds richness and density.
