Make a satisfying, high-protein version of Mexican street corn dip using whipped cottage cheese for creaminess and added protein. This dip captures the classic smoky, tangy flavors of elote.

  • 1 tablespoon olive oil
  • 1 cup low-fat cottage cheese, rinsed
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup Cotija cheese, crumbled, plus extra for topping
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chipotle chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Roast the corn: Toss the corn kernels with olive oil. Spread them on a baking sheet. Broil for 5 to 7 minutes, stirring halfway, until the kernels are lightly charred. Let the corn cool slightly.
  2. Prepare the base: Place the rinsed cottage cheese, Greek yogurt, lime juice, chipotle powder, smoked paprika, salt, and pepper into a food processor. Blend until completely smooth and creamy, scraping down the sides as needed. This creates your healthy base.
  3. Combine ingredients: In a medium bowl, mix the smooth cottage cheese base, the roasted corn, crumbled Cotija cheese, and chopped cilantro. Stir gently until everything is evenly distributed.
  4. Chill: Cover the dip and refrigerate for at least 30 minutes to allow the flavors to blend.
  5. Serve: Transfer the dip to a serving bowl. Sprinkle the top with extra Cotija cheese and a light dusting of chipotle powder before serving with tortilla chips or vegetable sticks.

Notes

  • For a lower-carb street corn dip, serve this with bell pepper strips or jicama sticks instead of chips.
  • If you do not have a food processor, you can use an immersion blender, but ensure the cottage cheese is fully blended for a smooth texture.
  • You can substitute Greek yogurt with sour cream if you are not focused on the highest protein content.
