Ingredients
Scale
1 pound ground beef
4 medium russet potatoes, thinly sliced
1 (10.5 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed cream of celery soup
1 cup milk
2 cups shredded cheddar cheese, divided
1 tablespoon olive oil
1 teaspoon seasoned salt
1/2 teaspoon black pepper
2 tablespoons melted butter
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish with cooking spray or butter.
In a skillet over medium heat, cook the ground beef until it is fully browned. Drain off any excess grease. Season the cooked beef lightly with salt and pepper. Set aside.
In a large bowl, combine the cream of mushroom soup, cream of celery soup, and milk. Stir until the mixture is smooth.
In a separate bowl, toss the thinly sliced potatoes with olive oil, seasoned salt, and black pepper until they are evenly coated.
Begin layering the casserole in the prepared baking dish. Spread half of the seasoned potato slices across the bottom of the dish.
Spread half of the cooked ground beef evenly over the potatoes. Pour half of the soup mixture over the beef layer. Sprinkle with 1 cup of the shredded cheddar cheese.
Repeat the layers: remaining potatoes, remaining beef, remaining soup mixture, and top with the remaining 1 cup of cheddar cheese.
Drizzle the 2 tablespoons of melted butter evenly over the top layer of cheese.
Cover the baking dish tightly with aluminum foil. Bake for 45 minutes.
Remove the foil and bake for an additional 15 to 20 minutes, or until the potatoes are tender when pierced with a fork and the cheese is bubbly and golden brown.
Let the hamburger potato casserole rest for 5 to 10 minutes before you slice and serve it.
Notes
For extra flavor, you can substitute one can of soup with French onion soup.
If you prefer softer potatoes, you can microwave the sliced potatoes for 3-4 minutes before layering them in the dish.
This is a great budget friendly ground beef meal for feeding a hungry crowd.
