Make this satisfying ground turkey sweet potato taco bowl for a flavorful weeknight dinner. It combines seasoned ground turkey and roasted sweet potatoes over bright cilantro lime rice.

  • 1 tablespoon olive oil
  • 1 pound ground turkey (93% lean recommended)
  • 1 medium sweet potato, peeled and diced into 1/2 inch cubes
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup water or low-sodium chicken broth
  • 2 tablespoons taco seasoning (or a blend of chili powder, cumin, oregano, and paprika)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Cilantro Lime Rice:
  • 1 cup long-grain white rice
  • 1 3/4 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • For Serving (Optional):
  • 1/2 cup salsa
  • 1 avocado, sliced
  • Shredded cheese or Greek yogurt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Toss the diced sweet potato with 1 teaspoon of olive oil, salt, and pepper on a baking sheet. Roast for 15 to 20 minutes, or until tender and slightly browned.
  2. While the sweet potatoes roast, prepare the rice. Combine the rice, 1 3/4 cups water, and 1/2 teaspoon salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork, then stir in the lime juice and fresh cilantro.
  3. Heat the remaining 2 teaspoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Add the ground turkey to the skillet. Break it up with a spoon and cook until it is fully browned. Drain off any excess grease.
  5. Stir the taco seasoning, 1 cup of water or broth, salt, and pepper into the ground turkey mixture. Bring to a simmer, then reduce the heat to medium-low. Let it cook for 5 to 7 minutes, allowing the liquid to reduce slightly and the flavors to combine.
  6. Stir the rinsed black beans into the turkey mixture and cook for 2 minutes to heat through.
  7. Assemble the bowls. Divide the cilantro lime rice among serving bowls. Top the rice with the seasoned ground turkey mixture and the roasted sweet potatoes.
  8. Add your preferred toppings, such as salsa, sliced avocado, or cheese.

Notes

  • You can prepare the sweet potatoes ahead of time to save time on a busy weeknight.
  • For a lower-carb option, skip the rice and serve the turkey and sweet potato mixture over a bed of shredded lettuce or cauliflower rice.
  • If you prefer a spicier flavor, add 1/4 teaspoon of cayenne pepper to the taco seasoning mix.
