1.5 lbs large shrimp, peeled and deveined
1/4 cup olive oil
1/4 cup fresh lemon juice
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Wooden or metal skewers
Instructions
If using wooden skewers, soak them in water for at least 30 minutes before use.
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the marinade.
Add the peeled and deveined shrimp to the marinade. Toss gently to coat all the shrimp. Let the shrimp marinate for 15 to 20 minutes. Do not marinate for longer than 30 minutes, as the lemon juice can start to cook the shrimp.
Preheat your grill to medium-high heat. Lightly oil the grates.
Thread the marinated shrimp onto the prepared skewers, about 4 to 5 shrimp per skewer.
Place the shrimp skewers on the hot grill. Grill for 2 to 3 minutes per side, until the shrimp are pink and opaque throughout.
Remove the grilled shrimp skewers from the heat and serve immediately.
