Make flavorful, tender grilled chicken every time with this easy lemon herb marinade. It is perfect for summer cookouts and quick weeknight dinners.

  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts or thighs

Instructions

  1. In a medium bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, oregano, thyme, salt, and pepper. This is your best chicken marinade base.
  2. Place the chicken pieces in a large resealable plastic bag or a shallow dish.
  3. Pour the marinade over the chicken, making sure all pieces are coated well.
  4. Seal the bag or cover the dish. Refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor. Do not marinate longer than 4 hours, especially with lemon juice.
  5. Preheat your grill to medium-high heat. Lightly oil the grates.
  6. Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
  7. Grill the chicken for 5 to 7 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit.
  8. Let the chicken rest for 5 minutes before slicing and serving.

Notes

  • For meal prep chicken, cook the chicken and store it in airtight containers for up to 4 days.
  • You can swap lemon juice for lime juice for a slightly different zest.
  • If using wooden skewers, soak them in water for 30 minutes before threading the chicken.
  • This recipe works well for both chicken breasts and thighs.
