Make these rich and buttery cookies that feature a soft, chewy center and a slightly crisp, powdered sugar exterior. These melt in your mouth cookies are perfect for your Christmas baking list.

  • 1 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup powdered sugar, plus extra for rolling

Instructions

  1. In a large bowl, cream together the softened butter and cream cheese until smooth. You can use a stand mixer or hand mixer for this step.
  2. Beat in the vanilla extract and the egg until just combined.
  3. Gradually add the dry yellow cake mix to the wet ingredients. Mix on low speed until a soft dough forms. Do not overmix.
  4. Place about 1 cup of extra powdered sugar into a shallow dish.
  5. Scoop the dough into balls, about 1 tablespoon each. Roll each ball thoroughly in the powdered sugar until completely coated.
  6. Place the coated dough balls onto baking sheets lined with parchment paper, leaving about 2 inches between each cookie.
  7. Bake in a preheated oven at 350 degrees F for 10 to 12 minutes. The edges should look set, but the center will still look soft and gooey.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The center will set up as they cool, giving you that signature texture.

Notes

  • For the best results and the most gooey center, do not overbake these cookies. They firm up significantly after cooling.
  • If you want a festive look for holiday cookie exchanges, press a few red or green sprinkles onto the dough balls before rolling them in the powdered sugar.
  • These are excellent as a make-ahead holiday cookie recipe; store cooled cookies in an airtight container at room temperature for up to 4 days.
