  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 large eggs, lightly beaten
  • 4 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup ketchup (for topping)
  • 1 tablespoon brown sugar (for topping)
  • 1 teaspoon apple cider vinegar (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard loaf pan or line a baking sheet with parchment paper for a free-form loaf.
  2. In a small bowl, combine the Panko breadcrumbs and milk. Let stand for 5 minutes to allow the breadcrumbs to soak up the liquid. This step helps keep the meatloaf moist.
  3. In a large mixing bowl, gently combine the soaked breadcrumbs, ground chicken, Parmesan cheese, eggs, minced garlic, chopped onion, parsley, salt, pepper, and Worcestershire sauce. Mix with your hands until just combined; do not overmix.
  4. Shape the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
  5. In a separate small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread this mixture evenly over the top of the meatloaf.
  6. Bake for 50 to 60 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  7. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing. This allows the juices to redistribute.
  8. Slice and serve your juicy chicken meatloaf.
