  • 1/2 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • 1 tablespoon ground cinnamon

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal. Lightly grease the paper.
  2. In a large bowl, whisk together the melted butter and both sugars until well combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract and the molasses until smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder, ginger, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix the batter.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for a fudgy texture.
  8. While the brownies cool completely in the pan, prepare the frosting. Beat the softened cream cheese until smooth. Add the powdered sugar and 1/2 teaspoon of vanilla extract. Beat until light and fluffy.
  9. Once the brownies are completely cool, spread the cream cheese frosting evenly over the top.
  10. Cut into squares and serve. This is a great holiday baking treat.

  • For a stronger gingerbread flavor, increase the ground ginger to 1 1/2 tablespoons.
