1 cup whole milk
1/2 cup heavy cream
3 ounces high-quality dark chocolate (70% cacao or higher), finely chopped
1 tablespoon unsweetened cocoa powder
1 tablespoon granulated sugar (adjust to taste)
1/4 teaspoon vanilla extract
Instructions
Combine the whole milk and heavy cream in a small saucepan over medium heat. Warm the mixture until steam begins to rise, but do not let it boil.
In a separate small bowl, whisk together the cocoa powder and sugar with about 2 tablespoons of the warm milk mixture until a smooth paste forms. This prevents lumps.
Add the chocolate paste mixture to the saucepan. Continue heating over medium-low heat, stirring constantly with a whisk until the chocolate is completely melted and incorporated.
Once melted, reduce the heat to low. Whisk continuously for 3 to 5 minutes. You are looking for the mixture to thicken slightly and become velvety. Do not let it boil.
Remove the saucepan from the heat. Stir in the vanilla extract.
