Make these simple Zucchini Pizza Bites for a healthy, low-carb snack or appetizer that tastes like real pizza.

  • 2 medium zucchini
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup low-sugar marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons mini pepperoni slices (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Grate the zucchini using the large holes of a box grater.
  3. Place the grated zucchini in a clean kitchen towel or several layers of paper towels. Squeeze firmly over the sink to remove as much moisture as possible. This step is key for crispy bites.
  4. In a medium bowl, combine the drained zucchini, beaten egg, Parmesan cheese, almond flour, oregano, garlic powder, salt, and pepper. Mix until everything is just combined.
  5. Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet, flattening them slightly into rounds about 1/2 inch thick. You should get about 12 to 14 rounds.
  6. Bake for 15 minutes until the edges start to look firm and lightly golden.
  7. Remove the baking sheet from the oven. Top each zucchini round with about 1/2 teaspoon of marinara sauce, a sprinkle of mozzarella cheese, and a few pepperoni slices, if using.
  8. Return the bites to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly.
  9. Let the zucchini pizza bites cool on the baking sheet for a few minutes before serving.

Notes

  • If you prefer an air fryer zucchini pizza method, cook the rounds at 380°F (195°C) for 10 minutes before adding toppings, then cook for 3-4 more minutes until cheese melts.
  • For the best texture, do not skip squeezing the water out of the zucchini.
  • You can use your favorite pizza toppings, such as mushrooms or bell peppers, instead of pepperoni.
