Make this flavorful Chicken Tortilla Soup on the stovetop in just 30 minutes. It is a hearty, comforting meal perfect for busy weeknights, featuring tender chicken and classic Mexican-inspired spices.

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 2 cups cooked, shredded chicken breast (rotisserie chicken works well)
  • Salt and black pepper to taste
  • For Serving: Tortilla strips, shredded cheddar cheese, avocado slices, fresh cilantro, lime wedges

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic, cumin, chili powder, and oregano. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth, diced tomatoes and green chilies, black beans, and corn. Bring the mixture to a simmer.
  4. Stir in the shredded chicken. Reduce the heat to low and let the soup simmer for 15 minutes to allow the flavors to combine. Season with salt and pepper to your taste.
  5. Ladle the soup into bowls. Serve immediately with your choice of toppings like crispy tortilla strips, cheese, avocado, cilantro, and a squeeze of fresh lime juice.

Notes

  • For crispy tortilla strips, cut 4 corn tortillas into thin strips and bake or air fry until golden brown and crisp.
  • If you prefer a creamier tortilla soup, stir in 1/2 cup of heavy cream or cream cheese during the last 5 minutes of simmering.
  • This recipe is simple to adapt for a slow cooker; combine all ingredients except toppings in the slow cooker and cook on low for 4-6 hours.
