1 tablespoon vegetable oil
1 pound ground beef
1 medium onion, chopped
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
1 (15 ounce) can whole kernel corn, drained
1 packet (1 ounce) taco seasoning mix
1 cup water
1 (8.5 ounce) box Jiffy Corn Muffin Mix
1 large egg
1/3 cup milk
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Heat the oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess grease.
Stir in the rinsed black beans, undrained diced tomatoes and green chilies, drained corn, taco seasoning, and water into the skillet with the beef mixture. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
Pour the meat mixture evenly into the prepared baking dish.
In a medium bowl, prepare the cornbread topping mix according to the package directions, substituting the milk and egg required on the box with the 1/3 cup milk and 1 large egg listed in this recipe. Stir until just combined.
Spoon the cornbread batter over the meat filling in the baking dish. Spread it gently to cover the filling.
Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
Remove the casserole from the oven. Sprinkle the shredded cheddar cheese over the hot cornbread topping. Let it sit for 5 minutes so the cheese melts.
Cut into squares and serve this comfort food casserole warm.
Notes
For a spicier flavor, add one diced jalapeño to the meat filling when cooking the onions.
You can substitute ground turkey or shredded cooked chicken for the ground beef if you prefer a different protein.
This Tamale Pie freezes well. Cool completely, cover tightly, and freeze for up to three months. Thaw overnight in the refrigerator before reheating.
