Instructions
Place the sugar cookies in a large bowl or a food processor. If using a food processor, pulse until you have fine crumbs. If mixing by hand, crush the cookies thoroughly until they resemble coarse sand.
Add the softened cream cheese and vanilla extract to the cookie crumbs. Mix with a sturdy spoon or use the food processor until the mixture is completely combined and forms a dough-like consistency.
Roll the dough into small, uniform balls, about 1 inch in diameter. Place the rolled balls on a baking sheet lined with parchment paper.
Chill the cookie balls in the refrigerator for at least 30 minutes. This step helps them firm up for easier dipping.
